Hungarian Goulash Soup (Homemade)

Ingredients

  • 1 lb (450 g) beef stew meat, cubed
  • 2 tbsp oil or lard
  • 1 large onion, chopped
  • 2–3 cloves garlic, minced
  • 2 tbsp sweet Hungarian paprika
  • 1 tsp caraway seeds (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 cups (1 L) beef broth or water
  • 2 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped (or 1 cup canned)
  • Optional: 1 tsp marjoram

Instructions

  1. Heat oil in a large pot. Sauté onions until soft.
  2. Remove from heat briefly, stir in paprika to release flavor.
  3. Add beef, garlic, caraway seeds, salt, and pepper. Brown lightly.
  4. Pour in beef broth, cover, and simmer 1 hour until beef is tender.
  5. Add potatoes, carrots, bell pepper, and tomatoes. Simmer another 20–25 minutes until vegetables are tender.
  6. Adjust seasoning and add marjoram if using.

Serve hot with crusty bread or a dollop of sour cream.
