Hungarian Goulash Soup (Gulyásleves)

Ingredients:

• 2 tbsp lard or vegetable oil

• 2 large onions, finely chopped

• 1.5 lbs (700g) beef (chuck or stew beef), cut into cubes

• 2-3 tbsp Hungarian paprika (sweet)

• 3 cloves garlic, minced

• 2-3 carrots, sliced

• 2 parsnips, sliced

• 1-2 medium potatoes, diced

• 1 bell pepper, diced

• 2 tomatoes, chopped (or 1/2 cup canned tomatoes)

• 1-2 bay leaves

• 6-8 cups beef broth or water

• Salt and pepper to taste

• Fresh parsley (for garnish)

For the Nokedli (dumplings):

• 1 egg

• 1 cup flour

• Pinch of salt

• Water (to make a dough)
