Hungarian Goulash (Gulyás)

Ingredients:

  • 2 tbsp lard or vegetable oil
  • 2 medium onions, finely chopped
  • 2 lbs (900 g) beef chuck or shin, cut into 1-inch cubes
  • 2–3 cloves garlic, minced
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp caraway seeds (lightly crushed)
  • 1 bell pepper, diced (red or green, traditional is Hungarian pepper)
  • 2 medium tomatoes, chopped (or 1 can diced tomatoes)
  • 4 medium carrots, sliced
  • 2 medium parsnips, sliced (optional but traditional)
  • 3 medium potatoes, cubed
  • 6 cups beef broth (or water)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
