🍲 Hungarian Goulash (Gulyásleves)

📝 Ingredients (Serves 4–6):
- 2 tbsp lard or oil (lard is traditional!)
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 2 tbsp sweet Hungarian paprika (the star 🌟)
- 500g (1 lb) stewing beef, cut into bite-sized chunks
- 1 large tomato, chopped
- 1 green bell pepper, chopped
- 2 carrots, sliced
- 2 parsnips, sliced
- 2 potatoes, cubed
- 1 tsp caraway seeds (optional but authentic)
- Salt & pepper to taste
- 6–7 cups water or light beef broth
- Optional: Csipetke (tiny pinched egg noodles)

👩🍳 Directions:
1. Sauté the aromatics:
In a large pot, heat lard/oil. Add onions and cook until golden. Stir in garlic and caraway (if using).
2. Paprika moment!
Remove pot from heat for a second, stir in paprika (this keeps it from burning and getting bitter). Add beef immediately and toss to coat.
3. Build the flavor:
Return to heat, add tomato and bell pepper. Cook for 10 minutes, stirring now and then.
4. Simmer:
Add carrots, parsnips, and enough water/broth to cover. Season with salt and pepper. Simmer gently for 1–1.5 hours until beef is tender.
5. Potatoes in:
Add cubed potatoes and cook for another 20–25 minutes. Add more water if needed.
6. (Optional) Add Csipetke:
Make a quick dough with flour and egg, pinch off tiny bits, and toss them in during the last 10 mins of cooking.
