Hungarian Gerbeaud Cake (Zserbó Szelet) – Recipe Only

Ingredients – Dough:

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup butter, cold and cubed
  • 2 egg yolks
  • 1/2 cup milk, lukewarm
  • 1 packet (7 g) dry yeast
  • Pinch of salt

Ingredients – Filling:

  • 1 1/2 cups ground walnuts
  • 3/4 cup apricot jam
  • 1/2 cup sugar

Ingredients – Chocolate Glaze:

  • 100 g dark chocolate
  • 2 tbsp butter

Instructions:

  1. Dissolve yeast in lukewarm milk with a little sugar; let foam.
  2. Mix flour, sugar, salt, and butter until crumbly.
  3. Add egg yolks and yeast mixture; knead into a soft dough.
  4. Divide dough into 3 equal parts.
  5. Roll first dough layer and place in a lined baking pan.
  6. Spread half the jam and sprinkle half the walnuts mixed with sugar.
  7. Add second dough layer and repeat filling.
  8. Cover with third dough layer.
  9. Bake at 180°C (350°F) for 35–40 minutes until golden. Cool completely.
  10. Melt chocolate with butter and spread over cake.
  11. Let set, then slice and serve.
