
Hungarian Gerbeaud Cake (Zserbó szelet)
Ingredients
For the Dough:
- 4 cups all-purpose flour
- ½ cup sugar
- 1 packet (7 g) active dry yeast
- ½ cup milk, warm
- 2 egg yolks
- ½ cup unsalted butter, melted
- Pinch of salt
For the Filling:
- 2 cups ground walnuts
- 1 cup sugar
- 1 cup apricot jam
For the Glaze:
- ½ cup dark chocolate
- 2 tbsp butter
Instructions
- Prepare the Dough:
- Dissolve yeast in warm milk with 1 tbsp sugar; let foam 10 minutes.
- Mix flour, sugar, salt, egg yolks, and melted butter. Add yeast mixture and knead into a smooth dough.
- Cover and let rise 1 hour until doubled.
- Assemble the Cake:
- Preheat oven to 180°C / 350°F.
- Divide dough into 3 equal parts. Roll out the first layer and place in a greased baking pan.
- Spread half of the apricot jam over the dough, then sprinkle half of the ground walnuts.
- Roll out the second dough layer, place on top, and repeat with remaining jam and walnuts.
- Cover with the third dough layer.
- Bake:
- Bake for 35–40 minutes until golden brown. Cool completely.
- Add Chocolate Glaze:
- Melt chocolate with butter and pour over the cooled cake.
- Let set, then cut into squares or rectangles.
