
Instructions
1. Heat the milk
Pour the milk into a saucepan and heat it gently over medium heat until warm but not boiling.
2. Prepare the custard
In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth. Slowly add some warm milk while whisking.
3. Cook the custard
Return the mixture to the saucepan and cook on low heat, stirring constantly until it thickens slightly. Add vanilla and let it cool.
4. Make the meringue
Beat egg whites with salt until soft peaks form. Gradually add sugar and continue beating until stiff and glossy.
5. Cook the meringue islands
Spoon small portions of the meringue into gently simmering milk or water and cook for about 1 minute per side.
6. Assemble the dessert
Pour the custard into bowls and place the fluffy meringue “islands” on top.
7. Serve
Drizzle with caramel sauce or sprinkle with toasted almonds if desired.
