🛒 Ingredients
Soup Base
- 2 tbsp oil or lard
- 1 small onion, finely chopped
- 1 tbsp Hungarian sweet paprika
- 5 cups water or light broth
- Salt & black pepper, to taste
- 2 large eggs
Potato Dumplings
- 2 medium potatoes, peeled & grated (or mashed)
- 1 large egg
- 3–4 tbsp all-purpose flour (as needed)
- Salt, to taste
👩🍳 Instructions
1️⃣ Soup Base
- Heat oil or lard in a pot.
- Sauté onion until soft (not browned).
- Remove from heat, stir in paprika.
- Add water/broth, salt, and pepper.
- Bring to a gentle simmer.
2️⃣ Potato Dumplings
- Mix grated potato, egg, flour, and salt into a soft dough.
- Using two teaspoons, form small dumplings.
3️⃣ Cook
- Drop dumplings into gently simmering soup.
- Cook 8–10 minutes until dumplings float and are tender.
- Lightly beat eggs and slowly drizzle into soup while stirring gently to form ribbons.
- Simmer 1–2 minutes more (do not boil hard).
🍽️ Serve
- Hot, with fresh bread
- Optional sprinkle of parsley 🌿
