These thin pancakes are similar to French crêpes but have a unique texture and a touch of Hungarian tradition in their preparation and fillings. - 2 large eggs
- 1 tablespoon sugar (for sweet palacsinta)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (optional, for sweet versions)
- Butter or oil for cooking
Instructions:
- Prepare the Batter: In a mixing bowl, whisk together the flour, eggs, salt, sugar (if using), and vanilla extract. Gradually add the milk while whisking until smooth. Let the batter rest for 20-30 minutes to allow the flour to hydrate and create a more uniform texture.
- Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour a small amount of batter (about 1/4 cup) into the pan, tilting it in a circular motion to spread the batter evenly.
- Flip and Cook: Cook for about 1 minute until the edges lift slightly and the bottom is golden brown. Flip and cook the other side for about 30 seconds. Remove and repeat with the remaining batter.
