🔥 INSTRUCTIONS

1. Prepare the dough

Mash cottage cheese with a fork until smooth.

  • semolina
  • sugar
  • salt
  • lemon zest

Mix well.

Cover and refrigerate at least 30–60 minutes
(Semolina must swell — important!)


2. Shape dumplings

Wet your hands slightly.
Form walnut-sized balls (or larger if you prefer).

If dough is too soft, add a tiny bit more semolina
but keep it soft, not stiff.


3. Cook

Bring a large pot of salted water to a gentle boil.
Add dumplings carefully.

Cook 8–10 minutes, until they float.
Let cook 2 minutes more, then remove with a slotted spoon.


4. Prepare coating

Heat butter in a pan.
Add breadcrumbs.

Toast on low heat until golden and nutty.
Stir constantly — don’t burn.


5. Roll dumplings

While dumplings are still warm, roll them in crumbs until fully coated.
