Ingredients

  • 1 cup (250g) cottage cheese (well drained)
  • 2 eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • Oil for frying

For Serving:

  • Powdered sugar
  • Apricot jam (optional)

Instructions

  1. In a bowl, mix cottage cheese, eggs, sugar, and vanilla.
  2. Add flour, baking powder, and salt. Stir until combined (dough will be soft and slightly sticky).
  3. Heat oil to 340–350°F (170–175°C).
  4. Using a spoon, drop small portions of dough into hot oil.
  5. Fry 2–3 minutes per side until golden brown.
  6. Remove and drain on paper towels.
  7. Dust generously with powdered sugar.

Serve warm, optionally with apricot jam.
