Instructions
- Prepare the dough
- In a bowl, mix yeast with warm milk and 1 tsp sugar. Let it sit 5–10 minutes until foamy.
- In a large bowl, combine flour, sugar, salt, eggs, melted butter, and yeast mixture. Knead until soft and elastic (about 8–10 minutes).
- Cover and let rise for 1 hour until doubled.
- Shape the cakes
- Preheat oven to 375°F (190°C).
- Wrap a clean rolling pin (or oven-safe bottle/cylinder) with aluminum foil, then lightly grease.
- Roll dough into thin strips (about ½ inch thick, 12–16 inches long).
- Wrap strips around the rolling pin, slightly overlapping, until you have a hollow “tube.”
- Roll gently on the counter to smooth out.
- Coat & bake
- Brush with melted butter.
- Roll in cinnamon-sugar (or plain sugar).
- Place rolling pin across a baking dish so the dough is suspended.
- Bake for 15–18 minutes, turning occasionally for even browning.
- Finish
- While still warm, brush again with butter and roll in your favorite topping (walnuts, coconut, cocoa).
- Slide off the rolling pin and serve warm.
✨ Soft inside, caramelized and crispy outside, Kürtőskalács is an unforgettable Hungarian treat!
Would you like me to also give you a shortcut air fryer version (no rolling pin needed) that tastes just like the street-style one?
