
Ingredients
- 1 whole chicken (or 1 kg chicken pieces)
- 2 carrots
- 1 parsley root
- 1 onion
- 2 cloves garlic
- 1 small cauliflower (optional)
- 1 potato (optional)
- salt
- 6–8 black peppercorns
- fresh parsley
- 2 liters water
Instructions
- Put chicken in a large pot and add water.
- Bring slowly to a boil and remove foam from the top.
- Add onion, garlic, carrots, parsley root, peppercorns, and salt.
- Cook on low heat 1.5–2 hours until chicken is tender.
- Add cauliflower and potato in the last 20 minutes.
- Remove chicken and vegetables, strain the broth if desired.
- Serve hot with chopped parsley and noodles if desired.
