
🇭🇺🍗 Hungarian Chicken Goulash (Csirkepaprikás-Style)
Tender chicken in a rich paprika sauce — cozy, comforting, and 100% Hungarian. Don’t lose this recipe!
🛒 Ingredients
- 2½ lbs (1–1.2 kg) chicken pieces (thighs & drumsticks preferred)
- 2 tbsp lard or oil
- 2 large onions, finely chopped
- 2 cloves garlic, minced (optional)
- 2 tbsp Hungarian sweet paprika
- ½ tsp hot paprika (optional)
- 1 green bell pepper, chopped (traditional but optional)
- 1 tomato, chopped (or ½ cup canned tomatoes)
- 1 cup chicken broth or water
- Salt & black pepper, to taste
- 1 bay leaf (optional)
To Finish
- ½–¾ cup sour cream
- 1 tbsp flour
👩🍳 Instructions
- Sauté the Onions
- Heat lard/oil in a pot.
- Cook onions slowly until soft and lightly golden.
- Add Paprika (Important Step)
- Remove pot from heat.
- Stir in sweet paprika (and hot paprika if using).
- This keeps paprika from burning.
- Add Chicken & Veggies
- Return to heat.
- Add chicken, garlic, pepper, tomato, bay leaf, salt, and pepper.
- Stir to coat chicken with paprika.
- Simmer
- Add broth.
- Cover and simmer gently 35–45 minutes, until chicken is tender.
- Creamy Finish
- Mix sour cream with flour.
- Stir into the pot and simmer 5 minutes (do not boil hard).
- Serve
- Adjust seasoning and serve hot.
