Hungarian Chicken Goulash

🇭🇺🍗 Hungarian Chicken Goulash (Csirkepaprikás-Style)

🛒 Ingredients

  • 2½ lbs (1–1.2 kg) chicken pieces (thighs & drumsticks preferred)
  • 2 tbsp lard or oil
  • 2 large onions, finely chopped
  • 2 cloves garlic, minced (optional)
  • 2 tbsp Hungarian sweet paprika
  • ½ tsp hot paprika (optional)
  • 1 green bell pepper, chopped (traditional but optional)
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1 cup chicken broth or water
  • Salt & black pepper, to taste
  • 1 bay leaf (optional)

To Finish

  • ½–¾ cup sour cream
  • 1 tbsp flour

👩‍🍳 Instructions

  1. Sauté the Onions
    • Heat lard/oil in a pot.
    • Cook onions slowly until soft and lightly golden.
  2. Add Paprika (Important Step)
    • Remove pot from heat.
    • Stir in sweet paprika (and hot paprika if using).
    • This keeps paprika from burning.
  3. Add Chicken & Veggies
    • Return to heat.
    • Add chicken, garlic, pepper, tomato, bay leaf, salt, and pepper.
    • Stir to coat chicken with paprika.
  4. Simmer
    • Add broth.
    • Cover and simmer gently 35–45 minutes, until chicken is tender.
  5. Creamy Finish
    • Mix sour cream with flour.
    • Stir into the pot and simmer 5 minutes (do not boil hard).
  6. Serve
    • Adjust seasoning and serve hot.
