Hungarian Cheese Biscuits (Pogácsa)

Instructions

1. Activate yeast

  • Mix warm milk + yeast. Rest 5 minutes.

2. Make dough

  1. Add flour + salt to a bowl.
  2. Rub in cold butter until crumbly.
  3. Add cheese, egg, sour cream, and yeast mixture.
  4. Mix and knead until a soft dough forms.
  5. Cover and rise 45–60 minutes.

3. Shape

  1. Roll dough to about 1.5–2 cm (¾ inch) thick.
  2. Score the top lightly with a knife (crosshatch pattern).
  3. Cut into small rounds using a cutter or small glass.

4. Bake

  1. Place on tray.
  2. Brush tops with beaten egg.
  3. Sprinkle cheese.
  4. Bake at 200°C / 400°F for 15–18 minutes, until golden.

5. Serve

Warm, soft, cheesy, buttery — perfect with soup, tea, or snacks.
