Hungarian Cabbage Goulash (Káposztás Gulyás)

Ingredients

  • 700 g pork shoulder or beef, cubed
  • 2 tbsp oil or lard
  • 2 large onions, chopped
  • 2 tbsp sweet Hungarian paprika
  • 1 tsp caraway seeds
  • 2 cloves garlic, minced
  • 500 g white cabbage, shredded
  • 2 tbsp tomato paste
  • 1 green bell pepper, chopped (optional)
  • Salt & black pepper, to taste
  • 750 ml water or broth
  • 150 ml sour cream (optional, for serving)

Instructions

  1. Heat oil/lard in a pot. Sauté onions until golden.
  2. Remove from heat, stir in paprika.
  3. Add meat, garlic, caraway, salt, and pepper. Brown lightly.
  4. Stir in tomato paste and bell pepper.
  5. Add cabbage and water/broth.
  6. Cover and simmer 1½–2 hours until meat is tender.
  7. Adjust seasoning and serve hot.

Serve with

  • Fresh bread
  • Boiled potatoes
  • A spoon of sour cream on top
