🇭🇺 Hungarian Beigli (Walnut & Poppy Seed Rolls)
🥮 Dough Ingredients (for 2 rolls):
- 3 cups (375g) all-purpose flour
- 1 packet (7g) instant yeast
- ½ cup (115g) cold unsalted butter, diced
- ¼ cup (50g) granulated sugar
- ½ tsp salt
- 1 egg yolk
- ½ cup (120ml) sour cream
- 2–3 tbsp cold milk
- Zest of 1 lemon (optional)
🌰 Walnut Filling (Diós töltelék):
- 1½ cups (150g) ground walnuts
- ½ cup (100g) granulated sugar
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- Zest of ½ lemon
- Optional: 1–2 tbsp rum or raisins
🌱 Poppy Seed Filling (Mákos töltelék):
- 1½ cups (150g) ground poppy seeds
- ½ cup (100g) granulated sugar
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- Zest of ½ orange
- Optional: chopped dried fruit or a little honey

- 1 egg yolk + 1 tsp water (first brushing)
- 1 egg white (second brushing)
