Here is a traditional and beloved recipe for Hungarian Beigli 🇭🇺, a festive rolled pastry filled with sweet walnut (diós) or poppy seed (mákos) filling. It’s a must-have during Christmas and Easter in many Hungarian homes.


🇭🇺 Hungarian Beigli (Walnut & Poppy Seed Rolls)

🥮 Dough Ingredients (for 2 rolls):

  • 3 cups (375g) all-purpose flour
  • 1 packet (7g) instant yeast
  • ½ cup (115g) cold unsalted butter, diced
  • ¼ cup (50g) granulated sugar
  • ½ tsp salt
  • 1 egg yolk
  • ½ cup (120ml) sour cream
  • 2–3 tbsp cold milk
  • Zest of 1 lemon (optional)

🌰 Walnut Filling (Diós töltelék):

  • 1½ cups (150g) ground walnuts
  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract
  • Zest of ½ lemon
  • Optional: 1–2 tbsp rum or raisins

🌱 Poppy Seed Filling (Mákos töltelék):

  • 1½ cups (150g) ground poppy seeds
  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract
  • Zest of ½ orange
  • Optional: chopped dried fruit or a little honey

🥚 To Brush:

  • 1 egg yolk + 1 tsp water (first brushing)
  • 1 egg white (second brushing)
