
Instructions
- Sauté the base:
Heat oil in a large pot over medium heat. Cook chopped onion until soft and golden. Add garlic and cook 1 minute. - Add paprika:
Remove the pot from the heat briefly and stir in the paprika to prevent burning. - Cook the meat:
Add beef cubes and sausage. Stir well and cook for about 5 minutes until lightly browned. - Build the soup:
Add tomato, bell pepper, potatoes, beans, and caraway seeds. Pour in broth and season with salt and pepper. - Simmer:
Bring to a boil, then reduce heat and simmer 60–75 minutes (less if using canned beans) until the beef and beans are tender and the broth is rich. - Serve:
Garnish with chopped parsley and serve hot with crusty bread.
🍲 Tip: Babgulyás is traditionally served as a hearty soup, thicker than regular soup but lighter than a stew, making it perfect for cold days.
