Hungarian Bean Goulash (Babgulyás) 🇭🇺

Ingredients

  • 2 tbsp vegetable oil or lard
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1½ tbsp sweet Hungarian paprika
  • ½ lb (225 g) beef chuck, cut into small cubes
  • 1 smoked sausage, sliced
  • 1 tomato, chopped (or ½ cup canned diced tomatoes)
  • 1 small bell pepper, chopped
  • 2 medium potatoes, peeled and cubed
  • 1½ cups dried beans (soaked overnight) or 1 can beans, drained
  • 5 cups beef broth or water
  • 1 tsp caraway seeds (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
