Hungarian Bean Goulash (Babgulyás)

Ingredients

  • 300 g dry beans (soaked overnight)
  • 300 g pork or beef (cubed)
  • 1 onion (chopped)
  • 2 tbsp oil or lard
  • 1 tbsp sweet paprika
  • 2 cloves garlic
  • 2 carrots
  • 2 potatoes
  • 1 smoked sausage (sliced)
  • salt
  • black pepper
  • 1 tsp caraway seeds
  • 1.5–2 liters water

Instructions

  1. Heat oil in a pot and sauté chopped onion until soft.
  2. Remove from heat, add paprika and mix.
  3. Add meat cubes and cook for a few minutes.
  4. Add garlic, beans, carrots, sausage, caraway seeds, salt and pepper.
  5. Pour in water and cook about 60 minutes.
  6. Add potatoes and cook another 20–30 minutes until everything is tender.

Serve hot with bread.
