Hungarian Bean and Sausage Soup

Hungarian Bean and Sausage Soup (Bableves Kolbásszal) 🇭🇺🥣

A smoky, hearty, and comforting soup—tender beans, flavorful Hungarian sausage, and rich broth make this a classic Hungarian favorite.

Ingredients

  • 2 cups dried white beans, soaked overnight
  • 250–300 g Hungarian smoked sausage (kolbász), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bay leaf
  • 1 tsp sweet Hungarian paprika
  • Salt & black pepper, to taste
  • 6 cups water or broth
  • 2 tbsp oil or lard

Instructions

  1. Cook Beans
Drain soaked beans. Place in a large pot with water/broth. Bring to a boil, then reduce heat and simmer until beans are nearly tender (about 45–60 minutes).
  2. Sauté Aromatics
In a small pan, heat oil/lard, sauté onion and garlic until soft. Stir in paprika briefly, then add to the soup.
  3. Add Vegetables & Sausage
Add carrot, bay leaf, and sausage slices. Simmer 15–20 minutes until vegetables are tender and flavors meld.
  4. Season & Serve
Remove bay leaf. Adjust seasoning with salt and pepper. Serve hot with rustic bread.

💡 Tip: For extra depth, add a small smoked ham hock while simmering, or a pinch of caraway seeds.
