1. Prepare the Dough:

  • In a large bowl, mix flour, baking powder, and salt.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Add sugar, egg yolks, sour cream, and vanilla.
  • Knead until a smooth dough forms (don’t overwork). Wrap and chill for 30 minutes.

2. Prepare the Apple Filling:

  • Grate the apples and squeeze out excess juice (important to prevent sogginess).
  • Mix with sugar, cinnamon, and lemon zest.

3. Assemble the Cake:

  • Preheat oven to 350°F (175°C). Grease or line a 9×13 inch (23×33 cm) baking pan.
  • Divide the dough in half. Roll out one half and place it in the bottom of the pan.
  • Sprinkle semolina or breadcrumbs over the dough to absorb juices.
  • Spread the apple mixture evenly over the bottom layer.
  • Roll out the second half of the dough and lay it over the apples. Seal the edges.
  • Brush the top with beaten egg and prick a few holes with a fork.

4. Bake:

  • Bake for about 35–40 minutes, until golden on top.

5. Cool & Serve:

  • Let cool completely before slicing. Dust generously with powdered sugar.
