
Instructions:
- In a large bowl, combine the grated zucchini, carrot, and crumbled feta cheese.
- Add the eggs, parsley, dill, black pepper, red pepper flakes, and salt. Mix well.
- Gradually add the flour and baking powder, stirring until you get a thick batter. If it’s too dry, add a little milk. If too wet, add more flour.
- Heat about 1/2 inch of oil in a pan over medium heat.
- Using a spoon, drop small portions of the batter into the hot oil. Flatten them slightly with the back of the spoon.
- Fry until golden brown and crispy, about 2-3 minutes per side.
- Transfer to a plate lined with paper towels to drain excess oil.
- Serve warm with garlic yogurt sauce or tzatziki.
