Steps:

  1. Sear the Beef:
    • Heat olive oil in a large pot. Sear the beef chunks until browned on all sides. Remove and set aside.
  2. Sauté Vegetables:
    • In the same pot, add onion and garlic. Sauté until fragrant.
  3. Build the Stew:
    • Stir in flour and tomato paste, cooking for 1 minute. Add beef broth, thyme, bay leaf, salt, and pepper.
  4. Simmer:
    • Return beef to the pot. Cover and simmer on low heat for 1.5-2 hours.
  5. Add Vegetables:
    • Add potatoes and carrots. Simmer for another 30 minutes until vegetables are tender.
  6. Serve:
    • Remove bay leaf and serve hot with crusty bread or on its own.
