Steps:
- Sear the Beef:
- Heat olive oil in a large pot. Sear the beef chunks until browned on all sides. Remove and set aside.
- Sauté Vegetables:
- In the same pot, add onion and garlic. Sauté until fragrant.
- Build the Stew:
- Stir in flour and tomato paste, cooking for 1 minute. Add beef broth, thyme, bay leaf, salt, and pepper.
- Simmer:
- Return beef to the pot. Cover and simmer on low heat for 1.5-2 hours.
- Add Vegetables:
- Add potatoes and carrots. Simmer for another 30 minutes until vegetables are tender.
- Serve:
- Remove bay leaf and serve hot with crusty bread or on its own.
