  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 green bell pepper, diced
  • 1 zucchini, diced (optional)
  • 1 can (14–15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) white beans or kidney beans, drained
  • 6 cups beef broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1 cup elbow macaroni (uncooked)
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

  1. Brown the Beef
    • In a large pot or Dutch oven, brown ground beef over medium heat.
    • Drain excess fat if needed.
  2. Build the Flavor
    • Add onion, garlic, carrots, celery, and bell pepper.
    • Cook 5–7 minutes until softened.
  3. Add Tomatoes & Seasoning
