Healthy & Moist Sugar-Free Cake

Instructions:

  1. Preheat the Oven
    Preheat to 350°F (175°C) and line a loaf pan or round 8-inch pan with parchment paper.
  2. Mix Wet Ingredients
    In a large bowl, whisk together eggs, yogurt, oil, vanilla, and sweetener until smooth and creamy.
  3. Add Dry Ingredients
    Stir in oat flour, baking powder, baking soda, salt, and cinnamon.
    Mix just until combined — don’t overmix!
    If batter feels too thick, add 1–2 tablespoons of milk.
  4. Bake
    Pour the batter into the prepared pan.
    Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool & Serve
    Let cool completely before slicing.
    Dust with a little erythritol “powdered sugar” or top with a spoon of Greek yogurt and berries.

  • Add mashed banana or grated apple for extra moisture.
  • Fold in blueberries, chopped nuts, or dark chocolate chips (sugar-free) for variety.
  • Store covered at room temperature for 2 days, or refrigerate for up to 5.
