
Instructions:
- Preheat the Oven
Preheat to 350°F (175°C) and line a loaf pan or round 8-inch pan with parchment paper. - Mix Wet Ingredients
In a large bowl, whisk together eggs, yogurt, oil, vanilla, and sweetener until smooth and creamy. - Add Dry Ingredients
Stir in oat flour, baking powder, baking soda, salt, and cinnamon.
Mix just until combined — don’t overmix!
If batter feels too thick, add 1–2 tablespoons of milk. - Bake
Pour the batter into the prepared pan.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. - Cool & Serve
Let cool completely before slicing.
Dust with a little erythritol “powdered sugar” or top with a spoon of Greek yogurt and berries.

- Fold in blueberries, chopped nuts, or dark chocolate chips (sugar-free) for variety.
- Store covered at room temperature for 2 days, or refrigerate for up to 5.
