🍰 Healthy & Moist Sugar-Free Cake
Ingredients
- 3 large eggs
- 1 cup plain Greek yogurt (or natural yogurt)
- ½ cup unsweetened applesauce or mashed ripe banana
- 1½ cups oat flour (or finely blended oats)
- 1 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease or line a cake pan.
- In a bowl, whisk eggs, yogurt, applesauce (or banana), and vanilla until smooth.
- Add oat flour, baking powder, cinnamon, and salt. Mix just until combined.
- Pour batter into pan and smooth the top.
- Bake 30–35 minutes, until a toothpick comes out clean.
- Cool before slicing.
