Ingredients

  • 3 large eggs
  • 1 cup plain Greek yogurt (or natural yogurt)
  • ½ cup unsweetened applesauce or mashed ripe banana
  • 1½ cups oat flour (or finely blended oats)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a cake pan.
  2. In a bowl, whisk eggs, yogurt, applesauce (or banana), and vanilla until smooth.
  3. Add oat flour, baking powder, cinnamon, and salt. Mix just until combined.
  4. Pour batter into pan and smooth the top.
  5. Bake 30–35 minutes, until a toothpick comes out clean.
  6. Cool before slicing.
