
Instructions
- Preheat oven
- Heat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- Make the dough
- In a bowl, mash bananas until smooth.
- Stir in oats, raisins/dates, nuts, vanilla, cinnamon, and salt. The mixture should be sticky but hold together.
- Form cookies
- Scoop spoonfuls of dough onto the baking sheet. Flatten slightly into cookie shapes.
- Bake
- Bake 12–15 minutes until set and lightly golden.
- Cool & enjoy
- Let cool on the sheet for a few minutes, then transfer to a rack. They’ll firm up as they cool.

- Add dark chocolate chips (if you allow a touch of natural chocolate).
- Swap raisins for dried cranberries or chopped apricots.
- Stir in 2 tbsp peanut butter or almond butter for extra protein.
