- Preheat the oven
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare the potatoes
- Wash and peel potatoes if desired.
- Make thin slices across each potato, about ⅛ inch apart, without cutting all the way through (place chopsticks or wooden spoons on either side to prevent slicing through).
- Season the potatoes
- Place potatoes on the baking sheet. Mix melted butter and olive oil, then brush generously over each potato, getting into the slices.
- Sprinkle with salt and pepper.
- Bake
