
🔪 PREPARATION
1. Season the chicken
In a bowl, mix:
- Salt
- Pepper
- Paprika
- Garlic powder
- Onion powder
- Rosemary/thyme
Rub seasoning all over the chicken pieces.
Let sit 10 minutes (or marinate overnight for more flavor).
2. Prepare the vegetables
In a large bowl, combine:
- Potatoes
- Carrots
- Onion
- Garlic
Add:
- Olive oil
- Salt
- Pepper
- Paprika
- Herbs
Toss until everything is evenly coated.

3. Sear the chicken (important for golden color)
Heat a large pan over medium-high heat.
Add olive oil + 1 tbsp butter.
Place chicken skin-side down (if using thighs).
Sear 4–5 minutes until deep golden and crispy.
Flip and sear the other side 2–3 minutes.
Remove from heat.
4. Assemble the baking dish
In a roasting pan or baking dish:
- Spread the seasoned potatoes + vegetables on the bottom.
- Place the golden-seared chicken on top.
- Pour ½ cup of water or broth around the vegetables (keeps them tender and juicy).
5. Bake
Bake uncovered at 200°C / 400°F for:
- 45–55 minutes for thighs
- 35–40 minutes for breasts
Halfway through, spoon the juices over the chicken for extra richness.
Chicken is done when:
- It reaches 75°C / 165°F internal temperature
- Skin is golden and vegetables are soft

6. Prepare a roux
In a small pot:
- Melt 2 tbsp butter
- Add 2 tbsp flour
- Stir for 1 minute until lightly golden
7. Add broth
Slowly whisk in:
- 1 ½ cups chicken broth
- Paprika
- Salt & pepper
Simmer 3–4 minutes until thick and smooth.
8. Serve
Pour over chicken & potatoes — restaurant-quality flavor!
