Ingredients
- 1 ½ lbs (680g) baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (or your favorite cheese)
- Fresh chives or parsley (optional)
Instructions
- Boil baby potatoes in salted water until fork-tender (15–20 minutes).
- Drain and place on a baking sheet lined with parchment.
- Gently smash each potato with the bottom of a glass.
- Brush with olive oil and season with garlic powder, paprika, salt, and pepper.
- Bake at 425°F (220°C) for 20 minutes until crisp.
- Add cheese on top and bake 5 more minutes until melted and bubbly.
- Top with chives or parsley!
