🧀 Cheesy Smashed Potatoes

Ingredients

  • 1 ½ lbs (680g) baby potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • Fresh chives or parsley (optional)

Instructions

  1. Boil baby potatoes in salted water until fork-tender (15–20 minutes).
  2. Drain and place on a baking sheet lined with parchment.
  3. Gently smash each potato with the bottom of a glass.
  4. Brush with olive oil and season with garlic powder, paprika, salt, and pepper.
  5. Bake at 425°F (220°C) for 20 minutes until crisp.
  6. Add cheese on top and bake 5 more minutes until melted and bubbly.
  7. Top with chives or parsley!
