
Instructions
1. Prepare the zucchini
- Wash and slice the zucchinis into even rounds.
- Pat them dry with a paper towel to remove excess moisture—this helps them crisp up.
2. Set up a breading station
- Bowl 1: Mix flour, salt, pepper, and garlic powder.
- Bowl 2: Beat the eggs.
- Bowl 3: Mix breadcrumbs and Parmesan cheese.
3. Coat the zucchini
- Dredge each zucchini slice in flour, shaking off the excess.
- Dip into the beaten eggs.
- Coat evenly with the breadcrumb mixture.
4. Fry
- Heat about ¼ inch of vegetable oil in a large skillet over medium-high heat.
- Fry the zucchini in batches for 2–3 minutes per side, until golden brown and crispy.
- Remove and drain on paper towels.
5. Serve
- Serve hot with marinara sauce, ranch dressing, or a squeeze of lemon juice.
