Fried rice is a quick, flavorful dish made with simple ingredients. It’s perfect for using leftover rice and can be customized with vegetables, chicken, shrimp, or eggs.


🍚 Ingredients

  • 3 cups cooked rice (cold, day-old rice works best)
  • 2 tbsp vegetable oil (or sesame oil for flavor)
  • 2 eggs, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup carrots, diced
  • ½ cup peas (fresh or frozen)
  • 2–3 tbsp soy sauce (to taste)
  • 1 tsp oyster sauce (optional, for depth)
  • ½ tsp black pepper
  • Salt, to taste
  • 2 green onions, chopped

Optional add-ins:
Cooked chicken, shrimp, beef, or tofu

  1. Prepare the pan:
    Heat 1 tablespoon oil in a large pan or wok over medium-high heat.
  2. Cook the eggs:
    Pour in beaten eggs, scramble gently, then remove from the pan and set aside.
  3. Sauté aromatics:
    Add remaining oil. Sauté onion for 1–2 minutes until soft. Add garlic and cook for 30 seconds until fragrant.
  4. Add vegetables:
    Stir in carrots and peas. Cook for 2–3 minutes until tender.
  5. Add rice:
    Add the cold cooked rice. Break up clumps and stir-fry for 3–4 minutes so the rice heats evenly.
  6. Season:
    Add soy sauce, oyster sauce (if using), black pepper, and salt. Mix well.
  7. Combine:
    Return scrambled eggs to the pan. Add green onions and mix everything together.
  8. Serve:
    Taste and adjust seasoning. Serve hot.
