- Sauté onion
In a medium pot, melt butter over medium heat. Add chopped onion and cook until soft and translucent. - Add flour to make a roux
Stir in the flour and cook for 1–2 minutes, stirring constantly, until it turns slightly golden. - Add paprika and broth
Sprinkle in the paprika, then gradually whisk in the broth to prevent lumps. - Add peas
Stir in the peas and cook for about 10–15 minutes, until tender. - Finish with sour cream
In a small bowl, mix sour cream with a spoonful of the hot liquid to temper it, then stir it back into the pot. Simmer gently (don’t boil) for 2–3 more minutes until creamy. - Season and serve
Add salt, pepper, and a pinch of sugar if you like. Sprinkle with fresh herbs before serving.
