
Instructions:
- Prepare the Gelatin

- Gently heat (microwave 10–15 sec or in a small pan) until completely dissolved. Set aside.
- Make Strawberry Puree
- In a blender or food processor, blend the strawberries, sugar, lemon juice, and vanilla extract until smooth.
- Whip the Cream
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Combine Gelatin & Strawberry Puree
- Stir the dissolved gelatin into the strawberry puree until fully incorporated.
- Fold in Whipped Cream
- Gently fold the whipped cream into the strawberry mixture in three additions.
- Be careful to keep it light and airy.
- Chill
- Spoon mousse into serving glasses or bowls.
- Refrigerate for at least 2–3 hours until set.
- Serve
- Garnish with fresh strawberries, mint leaves, or a dusting of powdered sugar.

- For extra flavor, add a splash of strawberry liqueur or a few drops of almond extract.
- Use frozen strawberries if fresh aren’t available; just thaw and drain excess liquid.
