🍞 Instructions
1. Preheat oven
- Preheat to 400°F (200°C).
- Line a baking tray with parchment paper.
2. Prepare the dough
- In a large mixing bowl, combine flour, baking powder, baking soda, sugar, and salt.
- Add cold butter cubes and rub in with your fingertips (or use a pastry cutter) until the mixture resembles coarse crumbs.
- Make a well in the center and pour in Amasi and vanilla extract.
- Mix gently with a fork or spoon until a soft dough forms — don’t overmix.
3. Shape the scones
- Turn the dough onto a lightly floured surface.
- Pat or roll it to about ¾ inch (2 cm) thick.
- Cut out rounds using a biscuit cutter or glass.
- Place on the prepared baking sheet, slightly touching each other for softer sides (or apart for crispier ones).
4. Bake
- Bake for 20–25 minutes, or until golden brown on top.
- Remove from the oven and let cool slightly on a wire rack.
5. Serve
Serve warm or at room temperature with butter, jam, or clotted cream. 🧈🍓
💡 Tips
- For extra tenderness, handle the dough as little as possible.
- You can brush the tops with a little Amasi or milk before baking for a lovely golden color.
- Add raisins, currants, or grated lemon zest for a sweet twist.
