1. Sear the Pork
- Heat oil in a large pan over medium heat.
- Brown the pork cubes on all sides. Remove and set aside.
2. Cook the Onions & Garlic
- In the same pan, sauté onions until soft and golden.
- Add garlic and cook 30 seconds more.
- Stir in paprika (sweet and/or hot) — do not burn it!
3. Build the Sauce
- Return pork to the pan.
- Add broth (enough to cover meat partially).
- Add bell peppers and tomatoes if using.
- Season with salt and pepper.
4. Simmer
- Cover and simmer for 45–60 minutes, until pork is tender.
5. Add Sour Cream
- In a small bowl, mix sour cream + flour (optional, prevents curdling).
- Stir into the stew and cook 5–10 minutes until creamy and thickened.
- Adjust seasoning as needed.
