Instructions:

  1. Make the broth
    • In a pot, heat oil/butter. Sauté onion, carrots, parsley root, celery, and garlic for a few minutes.
    • Pour in broth, add bay leaf, season with salt & pepper.
    • Simmer gently for 20–25 minutes, until vegetables are tender.
  2. Prepare dumpling batter
    • In a bowl, whisk eggs with oil and salt.
    • Stir in flour until thick batter forms (should be sticky but not too stiff). Add a little water if needed.
    • Let rest 5 minutes.
  3. Cook the dumplings
    • When broth is ready, use a teaspoon to drop small portions of dumpling batter into simmering soup.
    • They will puff up and rise when cooked (about 5 minutes).
  4. Finish & serve
    • Sprinkle with fresh parsley.
    • Serve hot with crusty bread on the side.

Tips:

  • Some Hungarian grandmas flavor the dumpling batter with a little chopped parsley or nutmeg.
  • If you want a heartier version, you can add small pieces of chicken to the soup.
