Instructions

  1. Make the Dough:
    • In a large bowl, mix warm milk, yeast, and sugar. Let it sit for 5–10 minutes until foamy.
    • Add eggs, salt, and butter. Mix well.
    • Gradually add flour, mixing until a soft dough forms.
  2. Knead:
    • Knead by hand for 8–10 minutes (or 5 minutes in a stand mixer with dough hook) until smooth and elastic.
    • Dough should be soft but not overly sticky.
  3. First Rise:
    • Place dough in a greased bowl, cover, and let rise for 1–1.5 hours or until doubled in size.
  4. Shape the Doughnuts:
    • Punch down the dough and roll it out to about 1.25 cm (1/2 inch) thick.
    • Cut out doughnuts using a doughnut cutter or a round cutter + small cap for the hole.
    • Place on a baking sheet lined with parchment paper.
  5. Second Rise:
    • Cover lightly and let rise for 30–45 minutes until puffy.
  6. Fry:
    • Heat oil to 180°C (350°F).
    • Fry doughnuts 1–2 minutes per side, until golden brown.
    • Remove and drain on paper towels.
  7. Coat:
    • Roll warm doughnuts in sugar or dip in glaze.

Simple Vanilla Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • 1/2 tsp vanilla extract
    Whisk until smooth and dip the doughnuts while warm.
