Ingredients

Sponge Cake Layers

  • 6 large eggs, separated
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract

Chocolate Buttercream

  • 1 cup (2 sticks) butter, softened
  • 1 cup powdered sugar
  • 4 oz melted dark chocolate (cooled)
  • 1 tsp vanilla extract

Caramel Top

  • ½ cup sugar
  • 1 tbsp butter

Instructions

1. Make the Sponge Layers

  1. Preheat oven to 350°F (175°C).
  2. Beat egg whites until stiff peaks form.
  3. In another bowl, beat egg yolks with sugar until pale and thick.
  4. Add vanilla, then fold in flour gently.
  5. Fold in the whipped egg whites carefully.
  6. Spread thin layers of batter onto lined baking sheets (you’ll make 6 thin layers).
  7. Bake each layer 5–7 minutes until lightly golden.
  8. Let cool completely.

2. Make the Chocolate Buttercream

  1. Beat butter until creamy.
  2. Add powdered sugar and beat until fluffy.
  3. Mix in melted, cooled chocolate and vanilla.

3. Assemble the Cake

  1. Layer the sponge sheets with chocolate buttercream between each one.
  2. Reserve a thin top layer for the caramel.

4. Make the Caramel Top

  1. Melt sugar in a pan until golden.
  2. Stir in butter.
  3. Quickly pour over the reserved sponge layer and spread evenly.
  4. Score into slices before the caramel hardens completely.

5. Finish

  • Place the caramel-topped wedges on top of the cake.
  • Chill before slicing.
