  1. Sauté the Onion (Optional but adds flavor):
    In a skillet, melt butter and cook sliced onions until caramelized (about 10–15 minutes). Set aside.
  2. Make the Meatloaf Mixture:
    In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and pepper. Mix until just combined.
  3. Shape and Cook:
    • Form the meat mixture into a loaf shape.
    • Place in your slow cooker (spray bottom first or use a liner).
    • Pour beef broth around the loaf (not on top).
    • Add the caramelized onions on top of the meatloaf.
  4. Cook:
    • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until fully cooked (internal temp 160°F/70°C).
  5. Add the Cheese:
    • Place Swiss cheese slices over the top of the hot meatloaf.
    • Cover for 5–10 minutes until melted.
  6. Serve:
    Slice and serve with mashed potatoes, green beans, or crusty bread to soak up the juices. Garnish with parsley or thyme if desired.
