- Sauté the Onion (Optional but adds flavor):
In a skillet, melt butter and cook sliced onions until caramelized (about 10–15 minutes). Set aside. - Make the Meatloaf Mixture:
In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and pepper. Mix until just combined. - Shape and Cook:
- Form the meat mixture into a loaf shape.
- Place in your slow cooker (spray bottom first or use a liner).
- Pour beef broth around the loaf (not on top).
- Add the caramelized onions on top of the meatloaf.
- Cook:
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until fully cooked (internal temp 160°F/70°C).
- Add the Cheese:
- Place Swiss cheese slices over the top of the hot meatloaf.
- Cover for 5–10 minutes until melted.
- Serve:
Slice and serve with mashed potatoes, green beans, or crusty bread to soak up the juices. Garnish with parsley or thyme if desired.

- Use provolone or mozzarella for a different flavor.
- Add a dash of balsamic to the onions while sautéing for extra depth.
