
👩🍳 Instructions:
1. Sauté the onions (optional but recommended):
- In a pan over medium heat, melt butter and olive oil.
- Add sliced onions and cook until golden and soft (about 10–12 mins), stirring often. Set aside.
2. Make the meatloaf mixture:
- In a large bowl, combine ground beef, soup mix, breadcrumbs, eggs, milk, pepper, garlic powder, and Worcestershire.
- Mix just until combined—don’t overmix.
3. Shape and place in crockpot:
- Form into a loaf shape and place in the center of your crockpot.
- Spoon the sautéed onions on top.
- Pour beef broth around the loaf (not over it) for moisture.
4. Slow cook:
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until fully cooked (internal temp should be 160°F / 71°C).
5. Melt the cheese:
- Lay Swiss cheese slices over the top of the meatloaf.
- Cover and let melt for the last 10–15 minutes.
6. Serve:
- Let rest for 5–10 minutes before slicing.
- Spoon some broth/onion mixture over each slice and garnish with parsley.
