Crockpot Cheesy Potatoes

Instructions:

  1. Spray the inside of your crockpot with nonstick spray.
  2. In a large bowl, mix together the soup, sour cream, melted butter, onion, garlic powder, salt, and pepper.
  3. Add the potatoes and 1 1/2 cups of the shredded cheese. Stir until everything is evenly coated.
  4. Pour mixture into the crockpot and spread evenly.
  5. Cover and cook:
    • On low: 5–6 hours
    • On high: 3–4 hours
  6. About 15 minutes before serving, sprinkle the remaining 1/2 cup of cheese over the top, cover again, and let it melt.
  7. Garnish with parsley or chives before serving.

Optional Add-ins:

  • Crispy bacon bits on top before serving
  • Swap cheddar with Colby Jack or Pepper Jack for a kick
  • Stir in diced ham for a full meal

These are creamy, cheesy, and perfect for holidays, potlucks, or as a side to ham, chicken, or beef.

Would you like me to also give you a loaded version with bacon, green onions, and ranch seasoning? 🥓🧅
