Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs (separated)
  • 1 3/4 cups buttermilk (or milk + 1 tbsp vinegar)
  • 1/2 cup melted butter (or oil)
  • 1 1/2 tsp vanilla extract

👩‍🍳 Instructions

  1. Preheat waffle iron.
  2. In a bowl: whisk flour, cornstarch, sugar, baking powder, baking soda, salt.
  3. In another bowl: whisk egg yolks, buttermilk, melted butter, vanilla.
  4. Combine wet + dry (don’t overmix).
  5. Beat egg whites to stiff peaks and gently fold into batter.
  6. Pour into waffle iron and cook until deeply golden & crisp.

✅ Swap some milk for club soda or sparkling water
✅ Brush waffle iron lightly with oil (not butter)
✅ For ultra crispy: bake finished waffles at 200°F (95°C) for 5–10 minutes
