Ingredients
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs (separated)
- 1 3/4 cups buttermilk (or milk + 1 tbsp vinegar)
- 1/2 cup melted butter (or oil)
- 1 1/2 tsp vanilla extract
👩🍳 Instructions
- Preheat waffle iron.
- In a bowl: whisk flour, cornstarch, sugar, baking powder, baking soda, salt.
- In another bowl: whisk egg yolks, buttermilk, melted butter, vanilla.
- Combine wet + dry (don’t overmix).
- Beat egg whites to stiff peaks and gently fold into batter.
- Pour into waffle iron and cook until deeply golden & crisp.

✅ Swap some milk for club soda or sparkling water
✅ Brush waffle iron lightly with oil (not butter)
✅ For ultra crispy: bake finished waffles at 200°F (95°C) for 5–10 minutes
