- Prep the wings
- Pat chicken wings very dry with paper towels (the drier, the crispier).
- Place them in a large bowl.
- Season
- Mix baking powder, salt, garlic powder, paprika, and pepper.
- Toss wings until evenly coated.
- Arrange for baking
- Preheat oven to 425°F (220°C).
- Place a wire rack on a baking sheet (this lets hot air circulate and makes them extra crispy).
- Lay wings in a single layer, not touching.
- Bake
- Bake for 40–45 minutes, flipping halfway through, until golden brown and crisp.
- Finish & serve
- Toss hot wings in your favorite sauce, or serve them plain with a dipping sauce like ranch or blue cheese.

- Baking powder raises the skin’s pH and dries it out = crunch!
