🛒 Ingredients

  • 1 lb (450 g) smoked sausage or kielbasa, sliced
  • 3–4 medium potatoes, peeled & cubed
  • 1 small onion, chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3 cups chicken broth
  • 1½ cups milk or half-and-half
  • ½ cup heavy cream (optional, extra creamy)
  • ½ tsp black pepper
  • ½ tsp paprika
  • Salt, to taste
  • Pinch of dried thyme or parsley (optional)

👩‍🍳 Instructions

  1. In a pot, brown sausage slices lightly. Remove and set aside.
  2. In the same pot, melt butter and sauté onion until soft.
  3. Stir in flour and cook 1 minute (don’t brown).
  4. Slowly whisk in chicken broth.
  5. Add potatoes, pepper, paprika, and thyme.
  6. Simmer 15–20 minutes until potatoes are tender.
  7. Add milk and cream; stir gently.
  8. Return sausage to the pot.
  9. Simmer 5–10 minutes until creamy and heated through.
