Ingredients

  • 1 lb shrimp, peeled, deveined, and cooked
  • 2 large cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp lemon juice (or vinegar)
  • 1 tsp Dijon mustard (optional)
  • 1 clove garlic, minced
  • Salt & black pepper, to taste
  • Fresh dill or parsley, chopped

Instructions

  1. If shrimp are raw, cook in boiling salted water for 2–3 minutes until pink. Drain and cool.
  2. In a bowl, whisk mayonnaise, sour cream (or yogurt), lemon juice, mustard, garlic, salt, and pepper.
  3. Add cucumbers, red onion, and shrimp.
  4. Gently toss to coat everything evenly.
  5. Chill for 20–30 minutes before serving.
  6. Garnish with fresh dill or parsley.

Tips

  • Use English cucumbers for less water
  • Add a pinch of Old Bay or paprika for extra flavor
  • Perfect as a light lunch or summer side 🥗💙
