Ingredients
- 2 cups coconut milk (full-fat)
- ¼ cup sugar (adjust to taste)
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a bowl, whisk cornstarch with ½ cup coconut milk until smooth.
- In a saucepan, combine remaining coconut milk, sugar, and salt. Heat over medium, stirring.
- When warm (not boiling), add cornstarch mixture.
- Cook, stirring constantly, until thick and creamy (3–5 minutes).
- Remove from heat and stir in vanilla.
- Pour into cups or a dish.
- Chill 1–2 hours or serve warm.
