Ingredients
- 500 g (about 1 lb) fresh or frozen green peas
- 1 medium onion, chopped
- 1–2 tbsp butter or oil
- 1 medium carrot, diced (optional)
- 1–2 potatoes, peeled and diced (optional, for creaminess)
- 1 liter (4 cups) vegetable or chicken broth
- Salt & black pepper, to taste
- 100 ml (½ cup) cream or sour cream (optional)
- Fresh dill or parsley for garnish
Instructions
- Sauté onion (and carrot, if using) in butter or oil until soft.
- Add peas (and potatoes, if using) and broth. Bring to a boil, then simmer 15–20 minutes until vegetables are tender.
- Use an immersion blender or regular blender to puree the soup until smooth.
- Stir in cream or sour cream for extra richness. Adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh dill or parsley.
