Cream Cheese Stuffed Banana Bread

Ingredients (Makes 1 loaf)

For the Banana Bread:

  • 2–3 ripe bananas, mashed
  • 1/2 cup (115 g) butter, softened
  • 1 cup (200 g) sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

For the Cream Cheese Filling:

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (50 g) sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven: 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Make cream cheese filling:
    Beat cream cheese, sugar, and vanilla until smooth. Set aside.
  3. Prepare banana bread batter:
    In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla, mixing well. Stir in mashed bananas.
    In a separate bowl, whisk flour, baking soda, and salt. Gradually fold dry ingredients into banana mixture.
  4. Assemble loaf:
    Pour half of the banana batter into the loaf pan. Spread cream cheese filling over it. Top with remaining banana batter and smooth the surface.
  5. Bake:
    Bake 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve:
    Let cool in pan 10 minutes, then transfer to a wire rack. Slice and enjoy!
